Fior d'Arancio is an outstanding blue cheese made by Sergio Moro of Moro Latteria di Moro Sergio in Oderzo in the province of Treviso, Veneto in northern Italy. His whole milk comes from the local cooperative dairy that his family has been a member of for over 50 years. The milk is made up of native Friesian, Brown Alpine and Red Cows. Moro's cheeses are made by cheese makers at the dairy under his specifications, Moro then takes it from there. In this case, wheels are pierced, place in barrels and bathed in Fior d'Arancio DOCG (a sweet wine produced with Moscato grapes grown in volcanic soil in Colli Euganei in the province of Padua, Veneto) for about 30 days. Finished on wooden planks, Fior d'Arancio is finally topped with orange peel. Literally meaning "orange blossoms," this ubriaco, "drunken," cheese is sweet and salty, with complex aromas of honey, peach, orange blossom and wildflowers. A truly unique blue that will stand out on your cheese plate. The harmonious flavor of this blue makes it an exceptional dessert cheese. You could use this in recipes as it has a nice creamy/crumbly texture, but this is really too special to not eat on its own!

Smokey Blue is the first smoked blue cheese, another first of Rogue Creamery (Oregon Blue was the first blue cheese made on the American West Coast). Smokey Blue is the cold smoked version of that Oregon Blue and is a very delicious and interesting blue cheese. The cheese is cold smoked for 16 hours with hazelnut shells; the result is a cheese that has a sweet flavor of caramel and hazelnuts that mellows the sharpness of the blue cheese. One of our new favorite cheeses is Blu '61, a soft Italian blue cheese washed in sweet wine and covered in red cranberries. This is a blue cheese lover's dream, as well as the labor of love of the cheese maker himself. Produced by La Casearia Carpenedo, Blu '61 is named after the year cheese maker Antonio Carpenedo became engaged to Giuseppina. This gorgeous wheel of cheese is covered in ruby red cranberries and washed in Raboso Passito IGT wine. As the wheel ages over a period of two and three months, it is repeatedly flipped by the cheese maker and more wine is applied to the wheel. This washing and aging allows the cranberries and wine to color the rind and infuse a fruitiness to the cheese. Notes of raisins, currents, vanilla and licorice begin to appear, which offsets the bold bite of this blue cheese.

While many cheeses are washed in wine, Passito is a unique choice for this cheese, as the wine is particularly labor intensive to produce. A late-harvest wine, Raboso Passito IGT is made by picking grapes in November and storing them in straw mats until the following year. This earns them the nickname of "raisin wine" or "straw wine," as the grapes begin to lose water, which concentrates their natural sugars and flavoring. Using such a rare wine does increase the expense in the cheese making process, but the intense flavor of the passito guarantees an impressive result in the hands of a skilled cheese maker.
